Genghis Khan is a well-known soul food of Hokkaido. There are many theories about its origin, but it is said to have been invented in the early Showa period (1926-1989) for Japanese people who were not accustomed to eating mutton, based on the Chinese dish "Khao Yang Loh" (roasted mutton). There are two main ways to eat it: grilling raw mutton and dipping it in sauce, or grilling seasoned mutton that has been dipped in a special sauce.
